Alessandro Filomena is passionate about cooking within the walls of the house, thanks to the women of the family, mother and grandmother. Once the compulsory education is over, he enrolls in the hotel business to give space to his mission: curiosity and passion for cooking. The master who forges it is Sergio Malfatti, brother of the famous poet Egisto. Sail then, very young, on the Costa cruises where thanks to the mentor refines the catering, food & beverage concept. He worked for the Prince at the Bistrot and at the Fratellini's always at the Forte dei Marmi. Opens the Muscovite version of the Bistrot of the Vaiani family and moves to Florence, al central Barretto to then embrace his most significant adventure at the Franco Mare in 2012 with which won awards on all the guides and two Michelin forks.
